About the Role:

We have an exciting opportunity to support our Transformation team as a Manager, Food Safety & Quality based in Singapore. The Manager, Food Safety & Quality position is responsible for providing leadership for supplier specification adherence, supplier QA KPI performance management in coordination with supply chain/IPC, category product development in coordination with culinary/innovation, category product improvements, category/product safety and product/ingredient-related problem solving for technical concerns. 

Supports the Culinary team with new product development by providing guidance on food safety and quality aspects, serving as the reference for cross-functional teams. Lead existent product development projects such as product match, onboarding new plants/suppliers and cost saving initiatives, working closely with IPC, Culinary and Marketing teams. Oversees manufacturing commercialization and all aspects related to the local suppliers.

In addition to ensuring compliance to Subway standards, this role also provides ongoing Quality and guidance to the cross functional teams to ensure understanding of FSQA guidelines. Must be flexible and creative to meet the business needs and exercise forward-thinking problem-solving skills, collaborating with the local team as a leader in positive culture to deliver quality results and to protect our guests and brand.  The position is also responsible to support with onboarding, training, providing technical support, approving facility audit requests, monitoring FSQA KPIs new/existing Master-Franchisees across the region.

Responsibilities include but are not limited to:

  • Quality Assurance/ Management: Execute monitoring of performance of suppliers and ensure compliance to specification and Subway Programs in conjunction with Procurement, Food Safety and Operations.  Utilizes root cause analysis to drive immediate resolution on issues identified through consumer or franchisee complaints or internal and supplier evaluations.  Ensure all products meet Legislative requirements in the County of Origin and Country of Usage. Investigate serious breaches of specification-product safety, legality and quality. Ensure corrective and preventative action is taken, details recorded and product is monitored for repeat occurrences. Maintain the approved suppliers list. Supports Food Safety to assess supplier facilities within the SEA markets.
  • Specification and Graphics Management: Establish, develop, and manage systems and programs for specification development, supplier approval, and collaboration with food safety and product evaluation teams on systemwide initiatives. Manages specifications updates. Manage graphics process for all products to ensure complies with Subway Graphics policies. Maintain the approved product list.
  • Product Development: Lead all aspects of SEA products (Protein, Sauce, Dairy, Bakery, Snacks/Sides, Beverages) technical development (product approval/sign off) with existing and new suppliers by working closely with Culinary/Innovation, Operations and Procurement teams, organize activities to establish product specifications. Participate in sample revision, in tasting & product cutting sessions/summits, generating technical reports, contribute in new supplier selection from a technical standpoint, follow up on supplier approvals, ensure successful product launches of new menu initiatives by attending first production runs to ensure product is in line with signed off specification. Work closely with the suppliers & the supply chain team on process yield improvement to drive commercial benefit and ensure product consistency. Ability to formulate within categories when required.
  • Master Franchisee: Support with onboarding, training, providing technical support, approving facility audit requests, monitoring FSQA KPIs new/existing Master-Franchisees across the region.
  • Incident Management: Support the Incident Management Team when there are safety and quality issues that occur in the field (recalls, notices to inspect, etc.).

 

Qualifications:

  • Bachelor's Degree in Food Science, Food Safety, or related field and 5+ years experience in restaurant and/or manufacturing, food safety, or R&D related fields.
  • Strong knowledge/experience on quality assurance management, preferably with large food service or supply chain companies.
  • Experience on food safety and quality subjects, as well as product categories (bread/cookies, protein, cheese, sauces), preferably with QSR companies.
  • Dependability and ability to prioritize in order to support multiple project timelines and stage gates effectively.
  • Organizational agility and ability of developing working relationships with the different internal/external agents.
  • Excellent communication/presentation skills to make information accessible to different audiences and to influence decisions within the organization using consistent data/analysis.
